Once in a Blue Moon Bakery has become a staple in the cozy downtown area of Cary, creating not only amazing looking cakes, but some of the most delectable flavor combinations you can imagine! Behind this extraordinarily popular bakery is a team of professionals that work tirelessly to create cakes and confections that keep customers coming back. Chef and owner Roger Dragan is at the helm of this sugary ship, along with his manager and lead decorator, Lily Lanehart. This dynamic duo continues to turn out tasty masterpieces that have become Once in a Blue Moon Bakery’s recipe for success.
WM: Please share with us a little background – What brought you here? Have you always wanted to make cakes?
RD: I am originally from Connecticut. After college I went to work for a medical supply company and remained there for 16 years as a District Manager for the New York/New Jersey area. When I turned 40 I resigned from my position and enrolled in the French Culinary Institute (now the International Culinary Center) in New York City. I always enjoyed cooking and decided I wanted to do it professionally. I moved here shortly after completing my culinary degree in 1997. Following a few short term positions with the Fearrington House and Maximillians I worked in corporate dining for 5 years until purchasing Once in a Blue Moon Bakery in May of 2002.
Lily Lanehart is our Manager and Lead Decorator overseeing our three other great decorators and coordinating all the wedding cakes from the ordering process to the finished cake being delivered and set up. She is also involved in managing the day-to-day operations of the business. Lily has over 20 years of decorating experience and has worked as a pastry chef and baker at several bakeries and restaurants in the Triangle. She has been at Once in a Blue Moon since 2007.
WM: What are some of your wedding cake signatures?
RD: The specialties of our cake and what makes them unique is the consistency in which they are made. Our cake is light, our mousse fillings are rich and delicious and our Butter Cream is fluffy!
WM: Some of your favorite wedding cake trends right now?
RD: Textured Butter Cream Style cakes such as Grandma style or Butter Cream layered bands are very popular today. These cakes present well with an elegant or rustic backdrop and look beautiful with fresh flowers.
WM: What is YOUR favorite wedding cake?
RD: Everyone has their preference in flavors. I prefer White Vanilla cake with Mandarin Orange Mousse and Vanilla Butter Cream. Lily’s favorite is chocolate with Tiramisu mousse filling.
WM: What advice do you give Brides and grooms when they are trying to decide on wedding cakes?
RD: The advice we give Brides and Grooms is to try and have an idea of what style they are looking for prior to their consultation. We advise them to pick the flavors and designs that they want because, after all, it is their wedding. We will work with them right up to the last minute making any changes that we possibly can in order to accommodate them. We assure them the cake will be there when scheduled and that the decorations will meet, and in many cases, exceed their expectations.
